
This easy to throw together recipe can be customised in so many ways, and takes 5 mins to prepare!
I love using grainy bread, so I used two slices of a high protein multi grain sliced bread.
If you want to have mushrooms on your toast you’ll want to start sauteing them before you cook your toast. I grease my pan with a little vegan butter, but you can also use oil, olive oil would work nicely, but any vegetable or nut oil would work.
Cut your mushrooms up, and pop them in your pan. I sautee them on medium high so they char a little without sweating too much. Flip them halfway through cooking, and when they’re browned to your liking take them off while your toast is cooking.

Pop your toast under the grill or in your toaster, and brown to your liking. I like my toast crispy but not too over!
While your toast is browning, cut your avocado in half, sliding the knife to the pit and rotating to slice the full thing. Twist your avocado and pop it apart. Use your knife to tap the pit and twist to remove it.
Cut your avo into slices while it’s still in the skin and use a spoon to scoop your slices out onto a plate.

When your toast is done, I like to butter it a little so the butter melts, then top with your sliced avocado. You can pop it on as is, or you can mash it roughly to make a ‘smashed’ avo toast.
One of my favourite customisations is to spread one of my slices with a little Marmite / Vegemite for the salty flavour, I find it adds a really nice depth and works well with the creamyness of the Avocado.
Top your avocado with your mushrooms, I also love topping with jarred fire roasted capsicum (red pepper). You can find these in jars in your local supermarket, usually stored in a seasoned oil. These give a delicious sweet pop to your toast.

I also love jalapenos so I usually add a few slices chopped up on top, but you can omit this if spice isn’t your thing!
Whatever you choose to top with, season with a pinch of sesame seeds, extra points for black sesame, I would also recommend toasting your sesame seeds for a deeper nuttier flavour! A herb mix, everything seasoning or Dukkah seasoning would also work fantastically!

As you can see, the options to customise are endless. When you’ve got your toasty buttery base, with your avocado on top, you can add any veggies you like! Sweetcorn, tomatoes, capsicum, mushroom, even some diced sauteed or oven cooked potato or sweet potato would work really nicely for a more filling meal!
