
These Asian inspired pancake scrolls are so easy and delicious to make, they are made with only 4 ingredients that you probably have lying around in your pantry and fridge!
What you will need:
- 2 cups all purpose flour
- Half tsp salt
- Olive oil
- 2 scallions, chopped just the green stems.
- 3/4 cup of warm water
Mix your flour and salt in a bowl, and add in your water to form a shaggy dough. Bring it together with your hands, if it doesn’t come together easily add a few more drops of water until you get a firm-ish dough. If it’s too wet, add a tad more flour.
Pop in on your work surface and knead for around 5 mins until you get a nice smooth ball of dough. Cover this and let it rest for 30 mins.
While you are waiting for your dough, chop up your scallions / green onions. I tend to use just the green stems, I do sometimes add a little of the white, you can use the whole lot if you don’t mind a stronger onion taste!
Split your dough roughly into 4, and roll each out into circles, around 2mm thick. Take one pancake, spread it with olive oil and sprinkle on your scallions generously. Place another pancake on top, and roll these again. Roll to around 2mm again, it doesn’t matter if the scallions poke through.
Cut your pancake vertically into strips, I usually get 6 or 8 strips per pancake. They want to be about 2cm wide or thereabouts. Now oil the top of these strips with your olive oil.
Now you want to roll your dough into pinwheels, from bottom to top, placing each roll on the next strip and repeating until you have a largish pinwheel. Set this aside and repeat for the other two pancakes.

Cover these and let them rest again for around 15 mins. This isn’t totally necessary if you don’t have time, but I like to let them rest. Once you have done this, you can roll your scroll out. This is personal preference, If you want a doughier bread, roll it out less, or if you want a crispier thinner pancake, roll it a little more. I usually go for about 15 – 20cm wide.
Now oil up your pan or hotplate with olive oil, and warm it on medium heat. Place your pancake carefully in the pan and fry until golden. Flip and do the same for the other side.

I usually give mine a bit of salt for seasoning, and eat them as is. You could add a little vegan butter to make them softer and more indulgent, we sometimes serve them with protein, mock duck or pork for example. They would also go very well with a satay sauce for dipping!

As I always say it’s fun to get creative and make a dish your own. You could customise this basic dough recipe and use spinach instead of scallions, add in some vegan cheese for some delicious cheesy scroll bread, or pesto and sun dried tomatoes would work really nicely!
