Easy Oreo Pancakes! 🥞

This recipe has is so quick and easy, using items you probably already have in your kitchen! It takes less than 5 mins to prep and only another 5 to cook so if you’re craving something naughty for breakfast, lunch, dinner or a late night midnight treat l, these are just the thing!

  • 1 cup flour (we used self raising)
  • 1 tblsp baking powder
  • 1 tablespoon sugar or syrup (maple or agave would work well!)
  • Pinch of salt
  • 1 cup of plant milk (soy works great, almond is delicious too!)
  • 1 pack of oreos smashed up
  • Vegan butter (we use Nuttelex coconut)

First mix all your dry ingredients in a big bowl. Then you want to make a well on the centre and add your plant milk bit by bit. you can just throw it all in and mix, or use a stand mixer, but I find doing it in 2 or 3 pours works well to stop your batter getting lumpy.

Mix the flour mixture slowly into the centre with the milk, add all your milk and mix until you get a thick smooth batter. Feel free to add more milk if your batter is a little to thick, or more flour if it’s a bit too thin.

Turn your pan on to a medium heat, coat it with vegan butter. Let it melt and then start pouring in your batter. It will spread out as you pour so don’t add too much, it will begin to cook on the underside straight away. Now you want to crumble your Oreos on top.

Check on the underside of your pancake after a couple of minutes, if it’s browning nicely, flip them over and brown on the other side. This side won’t take too long but give it some colour. The pan will toast your oreo biscuits too and give them a really nice crunch on the outside, whilst the batter will have made the insides a little gooey.

Plate them up, and serve up with a knob of butter melting on top, and a sprinkle with sugar. We used regular sugar but powdered sugar, or syrup would also be amazing! These pancakes are so super fluffy they are both light but decadent at the same time.

If you’re not keen on Oreos or you have a fave biscuit, have fun with these and switch it up! Use whatever biscuit flavours you like!

This simple batter recipe is also a good starting point if you prefer fruit pancakes, simple add your fruit on in place of biscuits, even plain pancakes with peanut butter or biscoff would work really really well!
