
These noodles are so super easy to throw together, and super tasty considering there are so few ingredients!
They’re also super versatile in that you can add any other veggies you fancy, tofu, mock meats, the possibilities are endless!
What you need:
- 200g mushrooms
- 1 pack Hokkien noodles (I had pre cooked ones from Aldi)
- 3tsp minced garlic (or about 4 cloves)
- 1tbs sesame oil
- 3tbs light soy sauce
- 3tbs dark soy sauce
- 1tsp sweet chilli sauce
- 1tsp black or white pepper
- 1tbs rice wine vinegar
Slice and sautรฉ your mushrooms in your sesame oil on medium heat, adding the garlic as they soften. Cook the moisture off the mushrooms and fry until browned, this should take about 5 minutes.
You can then add your pepper, and the white wine vinegar. Sautรฉ for another few minutes, and add the dark and light soy sauce. Add the sweet chilli and mix into the sauce. Let it bubble and cook for another few minutes.
Once your happy with your mushrooms you can add your noodles. Smell and taste your food as you cook, then you can tweak any recipe to your own tastes!
My noodles take just a few minutes in the pan to warm them but not to over cook them. Chewy noodles are good noodles! I keep stirring to make sure they don’t get over cooked, and so that the sauce coats them well.
Plate up and season to your tastes, we added a touch of salt as the soy sauce hadn’t made it too salty.

These were so easy and simple to make, and so tasty. It would be a good meal to batch cook as well and have for lunches during the week!
