
This recipe is an easy way to bulk up some packet ramen by adding ingredients that work really well along side them. It also gives you the chance to add a couple of servings of veg into your quick ready meal!
What you will need :
- Approx 3 small – medium baby buk choy
- Vegan butter (We use Nuttelex)
- Minced or crushed garlic (or fresh, even better!)
- Chilli flakes
- Your favourite pot noodle or ramen.
- Protein of choice (we used Omnimeat, we have used mock duck and mock beef balls before too!)
- Crispy fried sballots
First we need to prepare out bok choy. Seperate and wash the bok choy leaves, cutting off any soft or darker bits. Prep your pan with some vegan butter and some garlic. Let the garlic sizzle into the butter for a minute, then add your bok choy. I like to cut it up into smaller bits, sometimes the whites of bok choy can be a little stringy so I like to cut then into bite sized pieces.

Add a little more butter and garlic as they are cooking down – add this to your taste. We like a lot of garlic so we probably use around a heaped table spoon of minced garlic.
Before you start cooking up your protein start preparing your fave pot noodle, or ramen. While you are waiting for your noodles to soften, prep another pan with a little butter and place your protein in to cook up. Omni meat doesn’t take too long as it’s quite thin, I cook maybe for 4 or 5 mins per side on a medium heat. You can cook it soft or a little crispier, it will soak up your noodle sauce and broth either way!
Once everything is cooked up its time to build!
Stir your noodles, then add in your cooked up garlic bok choy, and your protein. You can leave it whole, topping the noodles, or I like to tear the Omnimeat up and mix it in with the noodles rather than keep it on top as that way it catches he flavour of your noodle broth a little better.
You can then garnish your noodles. If they came with nori / sesame seeds you can sprinkle these on now. We bought some crispy fried shallots which go amazingly well on top of noodles, and give a real nice texture difference compared to the soft veg and the firm but soft protein.

And there we go! It looks so much fancier than it is and really boosts the flavour and the nutritional value of any packet of noodles. You can customise this to suit your veggie needs, add more, add some different veggies, some snow peas, bean shoots etc. The possibilities are endless.
