Cheesy Mushroom Poutine 🍄

This home prepared twist on the classic Poutine is so quick and easy to make, and it’ll have you stuffed for for hours yet still wanting more!

What you will need:

  • Vegan oven fries or chips (we use Birdseye Parmesan flavour with Garlic and Herb – which are indeed vegan!)
  • A vegan cheese of your choice. (We used Dairy Free Down under for ours, it’s melts very well!)
  • A vegan gravy mix, (We use powdered Gravox Supreme – again – accidentally vegan!)
  • Mushrooms, we used 500g for our beasty portion!)
  • Vegan butter such as Nuttelex
  • Water for mixing the gravy

So, tray up your vegan fries and get them in the oven to start cooking. Meanwhile, melt some of your vegan butter in a pan, cut your mushrooms into slices and pop them in on medium to high heat. I like to cook mushrooms on high to get a bit of a char on them rather than cooking them slowly as they tens to sweat and give out a lot of moisture. The char gives a really nice umami flavour to the mushrooms. If your mushrooms have got too much moisture, just dab the pan with some kitchen towel to drain it.

Meanwhile, mix up your gravy mix, Gravox only needs water which is super easy. Get that on the stove and cook it up until it’s thickened. We like to add a knob of butter here to make the gravy extra rich. Keep stirring to avoid any lumps and make sure you stir the bottom of the pot too!

Once your mushrooms are done, add them, juice and all to the pot of gravy. Mix in well and let this simmer on a very low heat.

Now we want to get our cheese melting! If you have slices, that’s great, if not slice some of your cheese to about 1 or 2 mm thick.

I find vegan cheese melts best with damp heat such as steaming or microwaving, or direct heat. Here we are going to use direct heat. Take your sautee or frying pan and very lightly grease the pan with a little vegan butter. Place your slices directly onto the pan and wait for the sides to start bubbling. Use a spatula to check the cheese consistency, and once it’s gooey it’s all good!

Grab your tray of fries out the oven and let’s start building!

I usually put the cheese on first as the gravy keeps it nice and melted and soft. Grab a spatula, a spoon, whatever is easiest and disperse your melted cheese around your fries. It wil be difficult to pick up melted, but the joy of Poutine is it’s great to get lumps of melted cheese in a big bite, so don’t worry if you can’t spread it all evenly, it’s still going to taste fantastic!

Then all you need to do is pour over that luxurious buttery and rich mushroom gravy.

We garnished ours with chives for a little but of an oniony taste, and they were spot on. You could also use crispy shallots or fresh green onion.

We have done this recipe before with different style cheeses, vegan mozzarella or halloumi, and we’ve switched out the mushrooms for onions before which makes an amazing onion gravy, or splurge and use both!

The good thing about a recipe like this is it’s so simple and easy, it is easily customisable. There’s never one way to make delicious food so experiment and see how you can tweak recipes for your own pallette!
