Cheesy Chick’n Sando! 🧀

So we made these delicious mock chicken sandwiches a few nights ago and they’re so easy to do!

What you will need :

  • 2 Thick slices white bread
  • 2 Dairy free cheese slices
  • Mock chicken schnitzel of your choice (we use Plantein from Woolworths)
  • Vegan butter (we use Nuttelex Coconut)
  • A salad mix you enjoy, (We used a mixed leaf blend)
  • Vegan mayo (We used Heinz Vegan Mayo)
  • Diced white or red onion If you prefer
  • Diced Jalapenos

First you’ll need to add a little butter to the pan. Pan fry your schnitzel on medium heat until the batter or breading is nice and browned. I add a little when I flip to make sure the outside is crisp but the inside is still a title buttery and juicy.

Take this time to pre chop your onion and jalapenos ready for building your sando.

Once these are done set them aside or pop into the oven to keep them warm. A wire rack is best to stop the breading sweating and going soggy.

Meanwhile butter your bread on one side and toast in the pan or under the grill until the outside is nice and golden and crispy. I notice this takes a little longer with vegan butter alternatives so don’t panic if it takes a little while!

Remove these and again pop them aside, crispy side up to keep them from going soggy, or again you can use a wire rack or toast rack for this.

Now you want to melt your cheese. I do this by throwing my slices in a relatively dry pan, or with a small coating of the butter that has been left in the pan from the bread / schnitzel. Keep an eye on it, use a fork to test the consistency, or when it’s bubbling at the sides its ready.

Grab your bread and place it soft side down onto the melted cheese. Repeat this for your other slice, now you’re got perfectly melted vegan cheese on both inside slices of bread!

Now it’s time to build!

Grab a slice of toasted cheesed up bread, and add a little vegan mayo. Then layer on as much lettuce as you’d like! Add another squirt of vegan mayo when you are done, then comes the crispy Chick’n schnitzel! Balance that on top of your salad, then top that with your diced onion and jalapenos. Top it with your remaining slice of cheesy crispy bread, then optionally, sprinkle with a teeny bit of salt.

And voila!

Crispy, tender, juicy and a little bit spicy, this beast of a sandwich was almost enough to share! Such a good idea for a toasty cozy evening meal.
